Real homemade batter that you can whip up in your food processor or mixer! Preheat over to 350.
8 tbsp butter (1stick) + 1 1/2 Cp sugar Blend until thoroughly mixed
3 VERY ripe bananas (my were almost black) add in chunks-blend til smooth
2 Eggs add after bananas are blended
1/2 Cp buttermilk + 1/2 tsp baking soda blend together
2 Cp all-purpose flour + 1/2 tsp baking powder + 1/4 tsp salt blend together
Add 1/3 of the flour mixture and pulse (mixture will be dry), then add 1/3 of the buttermilk mixture to moisten. Repeat. Mix just until smooth.
Spoon batter into cupcake pans sprayed and fitted with paper liners. Check with a toothpick after 15 minutes. Mine were still very moist so I cooked them almost 5 additional minutes. Even though the baking time was "fussy" these cupcakes are the BOMB!
I made chocolate frosting but fresh whipped cream would be over the top with these cupcakes too.
I became a Mom at 45. Talk about WOW! There wasn't a chance I was going to miss 1 second of this tremendous gift I have been given.

Exceptional Baby Gifts
How about a one-of-a-kind baby gift that the child will LOVE?
I made one for my daughter when she was 2 years old. Think the real attraction was that it was almost the same height as she was. She took her "Fluffy" everywhere! She would use the fleece body as a mini blanket to cover herself if her legs were chilly. She loves sleeping with Fluffy because she can hug it and wrap her arms loving around her. As a matter of fact, she still sleeps with Fluffy to this day (and she is now 9)!
